Smokey Cheezey Raw Vegan Queso Dip + Dressing
Rainy Day Salad with Smokey Cheezy dressing.
1/2c well soaked cashews
1 small summer squash or peeled zucchini
Juice of 1 lemon
4TB nutritional yeast
1/3c dried tomatoes, soaked*
1/2tsp+ onion powder
1/2tsp garlic powder
1tsp smoked paprika
Pinch of salt, if you please
Throw it all in your Vitamix or high speed blender. Whirl. Enjoy! Add more or less spices. If you don’t have dried toms, use 1/4c fresh salsa, 1 tomato and 1 date…or skip it.
For the salad, just use what you have, placing them in a rainbow for extra pretty. Trust me. It tasted even better when you line up all of your toppings. I scored organic cherry tomatoes at our local Grocery Outlet, chopped them in half and threw in the dehydrator till mostly dry but still soft. Like little flavor jewels in my salad and I randomly throw them in just about any dishes! What would you use this totally raw, totally vegan cheese ‘alicious dressing and dip with?
