Dinner. Simple. Vibrant. 

1. slice what’s in the fridge (cucumbers, collards, bell pepper, red cabbage)
2. add protein (hemp seed or chopped almonds for me, flaky fish in the Mr.’s)
3. lay it out on rice paper wraps, nori seaweed wraps, or even sturdy green like a collard leaf

Make a dip like my Chipotle Dressing or use bottled sweet ‘n sour dipping sauce. Boom. Done.

I’ve added leftover chicken, fish, tempeh…use what you have. Enjoy! What’s on your plate?
