First, I made Pad Thai in ten minutes.  And couldn’t stop eating it!  Then I wanted something different so I essentially made the same thing but wrapped it in a rice paper wrapper with fresh mint.  Then I made an easy broccoli salad with minced red bell pepper and this dressing. And I’m still using this dip on the daily!

5 Minute Raw Vegan Thai Peanut (free) Dip and Dressing

2TB almond butter

2tsp maple syrup

2TB coconut aminos

2 minced garlic cloves or 1tsp garlic powder

1/2+tsp red pepper flakes

1/2tsp raw onion powder

1 drop lime essential oil

2 drops ginger essential oil

Put ingredients in a small lidded jar.  Shake well.  I recommend quadrupling and keeping it in the fridge.  It won’t last more than a few days!  For the full Pad Thai recipe, just pop over here.
