Guacamole.  I could eat the bowlful. And only slightly regret it.

By lightening it up a bit thanks to my secret ingredient- you can eat all the guac you want!

Raw, vibrantly delicious, and your friends will never guess there isn’t $12 in avocados in that bowl of guac you brought to the party.

Ingredients:

1c defrosted peas (I love the Trader Joe’s Organic frozen Sweet Peas)

1 large avocado

1c loose packed fresh cilantro

1/4c minced white onion

juice of 1 lime

3-5 drops lime essential oil

1/2-1 tsp garlic powder

1/2 – 1 tsp sea salt

Pulse cilantro and peas in a food processor until creamy.

You can also just use a fork to mash the peas and finely mince the cilantro.

Transfer to a bowl and mash in the avocado.  Mix in the rest of the ingredients.

This recipe is just a starting point.  Make it your own!

Omit the garlic or double it up.  Use spinach or watercress or parsley instead of cilantro.

Pssst…You can even make it with just peas and no avocado at all!
