Roast chicken. Cook up two. Freeze all but tonight’s dinner (chicken pot pie!). Make both with the bones. I so appreciate having cooked chicken in the fridge and freezer. It allows me to make one meal and simply add some chicken for the Mister, without making two separate meals.

Preheat to 425 degrees. Yes. 425!

Remove gizzards and neck from chicken. Save neck for stock. Stuff chicken with

1 lemon, quartered
1 onion, quartered
1 garlic bulb, halved
1 handful fresh thyme

Place on low-rimmed half sheet baking sheet like this one. (REDO THIS LINK) Smear skin with butter* or drizzle olive oil. Salt and pepper.

Bake about 1 hour 25 minutes for a 5 lb bird. My oven takes 1 hour 40 minutes for two chickens.

Tender, never dry, and bursting with flavor. Enjoy!

*Butter seems to splatter far less.
