Roasted Tomato Sauce. Flavor bomb that freezes great and is easy, easy, easy. One of the recipes I use to help keep everyone well nourished without depleting myself. I prefer this raw, though flavor is intensely good roasted.

About 10 tomatoes, roughly chopped.

2 onions, roughly chopped

6 garlic cloves, smash with side of knife and remove peel

1/4 cup fresh herbs or 4TB dried (thyme, oregano)

Salt and pepper

1/4 cup olive oil or melted coconut oil generously poured over

1/8 cup balsamic vinegar poured over

You could call this done and enjoy RAW! Or…

Spread on half sheet baking pan, any low rimmed pan. Roast at 425 for 45 minutes to an hour. I leave as is or pulse in food processor. Freeze or devour. Use as pasta sauce, pizza sauce, dip, bruschetta…or eat by the spoonful!
